As I prepare my first Filter Kaapi, I'm lost into nostalgic thoughts from my childhood days.
I remember back in the 1990's, when I used to take the bus to Nanganallur where my grandparents resided.
It was usually this way for me that, when needed Tea, my mom made it the best way. But, when I get to smell the Kaapi, my mind is taken away and lost into the strong aroma from my Granma's traditional Kaapi, in fact, her recipe dates back to the origin from her mom (My Great granma, we called her Thangakka, she was such a lovely woman).
Also, when my mom used to prepare Kaapi, she wouldn't make it so strong like my Granny, hence I used to wait all the week until I visit Nanaganallur, firstly for this Kaapi.

Parameswaran Coffee, the shop which still gives us this best Kaapi powder, remembers us when we order. I still recall my Granma call and say she wants a Kilo and sometimes they wouldn't even mind to send it home through someone.
Back then, it used to be a Green coloured bus in Chennai (I prefer to call it Madras, because it is an emotion to a lot of us to call it this way) and as I visit my Grandparents, I remember my Granpa (Appapa we called him), he was definitely one of the best persons one would ever meet, one could find him read the newspaper sipping a cup of Kaapi and enjoying the morning blues.
As I see him having the Kaapi, I recollect making a huge noise and asking my Granny to make me a cup (It is served in a Tumbler and Davara).
The tumbler reserves heat because of a smaller surface area compared to the Davara, which is quite wide to dissipate heat fast.
I can not compare the taste of Kaapi with any other kind of Coffee which I've had in my lifetime so far. It is a nostalgic aroma, a blend of Strong Coffee decoction and Milk and so hot when being served.
And then, I could find my Uncle wake up and come and sit on the sofa and all of us having Kaapi together. It was indeed the best days of my Childhood, no mobile phones, no interest for Telivision, rather sound and bright memories.
The method of preparing Filter Kaapi is still traditional.
The conventional Kaapi maker
It uses two containers, with one sitting on top of the other and closed with a lid.
The one on the top has tiny holes and when the coffee powder is put inside and hot water poured, the coffee decoction gets brewed and weighs down due to gravity and falls down into the container in the bottom.
This decoction needs to be mixed with hot milk, depending on how strong you would need it and a spoon of sugar would taste great if you wouldn't prefer the raw taste of coffee.
I prefer the conventional lifestyle still, avoiding machines wherever I can, for example, using a traditional vessel for Kaapi than going for an Electric coffee maker.
If you happen to travel on the highway in the South of India, you might even be surprised to find them serve it in a Brass vessel, because its thermal conductivity is higher and it would be more hotter.
If you ever get to try Kaapi, I would recommend you to sit next to a window, reading a newspaper, with some nice music in the background and sipping Kaapi smoothly and relish the flavour.
